Aunt CC’s Salsa

This salsa has loads of corn plus tomatoes, cilantro, red pepper and garlic that we can get from our garden and our CSA.
- 2 cups of corn (fresh cut off the cob tastes best but you can use frozen corn too)
- 1 tomato
- 1 red pepper
- 2 avocados
- 1 can of black beans
- 1 tsp cumin
- 3 cloves of garlic
- 2 tablespoons of cilantro
- Juice of 1 lime
- Salt and pepper to taste
Cut up the avocado and mix with lime juice. Add remaining ingredients. Chill.
We like to eat this salsa with corn chips for a snack. We also put it in burritos or over nachos with cheese.
