Cherry Lime Mojitos

Summer time calls for a local twist on a favorite tropical drink of mine. Try making this cherry lime mojito for your next picnic, and it’s easy to make without the rum and still as tasty! Be sure to have a large pitcher to make in & serve from.

Ingredients:

1/4 cup fresh mint (peppermint preferred, but use spearmint if you have it)
4 limes, sliced into wedges
1/4 cup raw sugar
3 cups fresh, pitted sweet cherries
12 oz white rum
1/4 cup water
2 liters sparkling water

Instructions:

Start by muddling the mint with the sugar & limes (using a large wooden spoon or the like). Add cherries and muddle more. Once the sugars are incorporated and the fruit is expressed, add the liquids and stir well. Refrigerate before serving. Pour over ice, and serve with a mint and cherry garnish. For a virgin option, simply eliminate the rum. Serves 10.
