SUMMARY:NOFA's Spring Cheesemaking Workshops: Making Hard Cheeses
DESCRIPTION:Participants will learn to select the right quality milk\, discern what kinds of milk are appropriate for each type of cheese\, and choose what kind of bacteria to use as a starter. Workshops cover as many cheeses as possible during each period. Participants in Making Soft Cheeses will be given samples of cheese to take home and practice aging. This may or may not be possible for Making Hard Cheeses because of production size limitations in the cheese room. DESCRIPTION:This workshop will take participants through the entire cheese-making process. Participants will begin with pumping the milk into the cheese room\, heating the milk\, adding cultures\, adding rennet\, cutting the curds\, hooping\, and flipping the cheeses. Registrants will take home a one lb wheel of cheese with instructions for home-aging. Everyone will have a chance to taste the different cheesesmade at Cricket Creek and tour the farm. As the restaurant grew\, so did her notion that the strength of her business relied upon the quality of its locally grown ingredients. Envisioning how strengthening relationships among independent\, community-rooted enterprises could inspire profound social change\, she founded the Sustainable Business Network of Greater Philadelphia in 2001\, and co-founded the nationwideBusiness Alliance for Local Living Economies that same year. Judy also founded Fair Food in 2000\, dedicated to building a local food system in the Philadelphia region. In 2009\, she sold the White Dog through a unique agreement that preserves local\, independent ownership and maintains sustainable business practices\, including buying from local farmers\, composting and using renewable energy. DESCRIPTION:Presented by Todd Lynch\, landscape architect. \nRestoration in the landscape typically means ecological restoration\, such as the restoration of coastline after Katrina\, or human health restoration through practices like horticultural therapy.  A central challenge to the landscape architect is how to get people into the landscape and deepen their connections to the world around them. \nThis talk will address the question\, Can medicinal plants in the landscape be a means to restore not only macro-scale ecological systems\, but also such micro-scale systems as our day-to-day health?  Todd will share several projects that explore these questions and that feature medicinal plants as part of an overall design response.

We’ll be on the front lawn of 119 Meadow St.\, across the street from the Florence community gardens. \nWe’ll have lots of cool season veggie starts like onions and greens\, over 20 different culinary and medicinal herb varieties\, strawberry plants\, marigolds and nasturtiums\, and some very cute pansies and violas. \nAs always\, there will be snacks and iced herbal tea!

DESCRIPTION:This is an educational training for Hampshire County school administrators\, business managers\, school committee members\, and other people in the school environment who are interested in learning about the economic and social benefits of implementing a new – or expanding an existing – farm to school program  at the K-12 level. SUMMARY:After-School Farm Club
DESCRIPTION:The Farm Education Collaborative presents many spring children’s programs.  At the After-school Farm Club children will explore farm and field while assisting the Crimson & Clover farmers with planting spring crops\, hands-on projects\, farm animal chores\, cooking\, and more.  Each week will include preparing and enjoying a tasty\, farm snack together.  This program is meant for children between the ages of 8-12.  The 7 week program is $85-$130 on a sliding scale.  There is financial aid available for low-income individuals and households.  Learn more and register online here.
