SUMMARY:Workshop: Cooking from Garden Abundance
DESCRIPTION:August is the most wonderful month for cooking from the garden.  We are presented with a smorgasbord of ingredients to choose from\, offering us every imaginable flavor\, texture\, and color combination.  We can walk out to the garden and find ingredients for meals from every cuisine in the world.  This class will focus on using a wide variety of just-harvested vegetables and fruits.  We’ll cook up a storm and then sit down to enjoy a relaxed meal together\, enjoying all of our creations.  Bring leftover containers! \n Learn techniques and fundamentals hands on while Alice introduces you to the experience of cooking with all of your senses.  We’ll take the time to really look at the foods as they are prepared; notice how the aroma changes as they are cooked; tune in to the change in the sounds as the ingredients transform\, and taste as the dish progresses.  Learn about deep flavors and surface flavors and about layering flavor into a dish.  Appreciate the alchemy as separate ingredients marry & meld to create something altogether different.  Most of all\, we’ll have fun! \n Visit the Taproot Commons website to register.

SUMMARY:Workshop: Feeding the Hungry - Food and Shelter for the Pollinators
DESCRIPTION:Have you thought about the birds and the bees recently? How about the butterflies\, beetles\, wasps\, moths\, and flies? Pollinators gift humans with every third bite of food that we eat by pollinating the majority of our food crops. Bees are keystone species in most terrestrial food webs ; without them\,  80% of our planet’s flowering plants would disappear\, along with the animal species that depend on them for food. This workshop will focus on why the pollinators are in trouble and how we can support them by creating habitat that provides sources of pollen\, nectar\, host plants\, and shelter. For me\, there is a very personal joy that rises up when I watch a butterfly uncurl its long tongue to sip nectar from a flower or when a pollen-dusted bee lifts from a blossom in my garden and makes a bee-line for its nest to provision its offspring. I know I have provided a good meal. \n This workshop will introduce the basic principles of designing a pollinator garden and suggest plant species that are the most beneficial to bees and butterflies. I will emphasize the stunning variety of native plants that feed our native pollinators. We will cover seed collection\, how to grow plants from seed and division\, and the special germination requirements of native perennials. We will learn the importance of butterfly host plants and nest sites for bees. Weather permitting\, we will take a walk through pollinator habitat on Taproot Commons Farm and observe the pollinators at their work. I will provide instructions and materials for building bee boxes and each participant will go home with bee box kits\, a variety of native perennial seeds\, and hopefully a desire to feed and shelter your pollinator neighbors. \nVisit the Taproot Commons website to register.

SUMMARY:Workshop: Livestock Buying 101
DESCRIPTION:It’s tough being new to livestock- and living things are fraught enough without choosing a good\, solid animal to begin with. As my neighbor Ron says\, “All livestock is dead stock.” Hopefully\, armed with some good information- you can get there on your own terms as much as possible. \n In this class we’ll discuss what you want to look for and specific questions to ask when buying cattle\, goats\, pigs\, and poultry. Proper vocabulary and terminology when referring to various types\, ages and genders of animals will also be clarified\, as this helps interactions with sellers go more smoothly (think about various cattle identifiers and descriptors alone: cow; heifer; calf; steer; bull; ox; short-bred; fresh; open; freemartin; dairy breeds vs. beef breeds etc.) \n We’ll visit with Taproot’s own farm animals (dairy cows and heifers\, working steers\, dairy goats\, pigs\, ducks\, chickens\, and turkeys) and view strengths and weaknesses. There will be ample time for discussion and specific questions. \n Visit the Taproot Commons website to register. \nNote: This is an introductory 101 class\, not a livestock “care” course. There will be a solid overview of each animal mentioned\, but we will not go into much depth. If you would like to see a specific animal all around care and housing course (such as “Raising Ducks”)- let us know\, and we’ll see if we can put one together for next season.

SUMMARY:Workshop: Felted Rugs for the Home with Chris White
DESCRIPTION:Go green and support New England farms! Chris White will lead a weekend workshop on how to felt a durable\, lasting rug for your home using selected wools from the Pioneer Valley and other small farms farther afield. We’ll be using beautiful\, rich\, hand-dyed wools and embellishments to decorate the background of natural sheep colors (brown\, white or gray). Materials fees will vary depending on the size of the rug and type of wool used (approx. $85 for a 3′ x 4′ embellished rug). Rugmaking is a very physical process and participants should plan accordingly. Discount registration is offered for two people who would like to participate in the class as a team – great for couples or for friends who need a special wedding gift for a mutual acquaintance! Please note that while no prior experience is required\, the workshop does require physical endurance. \nChris White is the owner of Magpie Designs Felting Studio and New England Felting Supply in western Massachusetts. After teaching for a number of years\, she now concentrates on a few national courses and gives workshops for guilds and other groups. Chris has been felting professionally since 2001 and has worked in a variety of techniques with internationally known feltmakers. Founder of the Northeast Feltmakers Guild\, she has also written about felt for various publications and served as guest curator for felt shows. She is the author of Uniquely Felt\, (Storey\, 2007). \nRegister here

SUMMARY:Workshop: Traditional Vegetable Pickling - Garden to Storage Jar Using Only Salt
DESCRIPTION:Learn to preserve vegetables the way our great-grandmothers did\, with “lactic acid fermentation\,” (they called it “pickling.”) It is easy\, quick\, uses no vinegar (just salt)\, and requires no energy input beyond your chopping skills. The salt creates an environment for the friendly bacteria to grow that keeps vegetables from spoiling and increases the nutritional value of the veggies. The result is food that tastes slightly salty\, a little bit sour\, and wonderfully fresh. Traditional pickles have nearly disappeared since the advent of industrial food and but are making a comeback thanks\, in part\, to the work of Sandor Katz. I’ll tell you all about the health and storage benefits of pickles. Then we’ll make both a shredded cabbage “kraut-chi” and a brined root pickle with vegetables we will harvest from the Taproot Commons Farm garden (and that will become part of the farm’s stored winter foods). \nVisit the Taproot Commons website to register.
