March 9: Maple Syrup

It’s easy to love maple syrup.  It’s sweet and delicious, and its history in our region goes back long before European settlement.  Sugaring also brings in farm income in the off season and provides farmers with a reason to manage and maintain their woodlots.  Maple syrup is available year round, but now is the time to watch it being made.  A visit to a sugar shack offers sweet smells (and tastes!), billowing steam, good food, and a reminder that some things can only be experienced in the right place at the right time.
