Stockbridge Farm’s New England Salsa and Chips

Stockbridge Farm

  • 1 large crisp apple (such as McIntosh) unpeeled, cored and cut into chunks
  • 1 cup fresh cranberries
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cup onion (red onion is good here), chopped
  • 3/4 cup yellow bell pepper, chopped
  • 1 clove garlic, finely chopped
  • 1 fresh jalapeno pepper, minced
  • 1/2 teaspoon salt
  • fresh ground pepper, to taste
  • corn chips
  • fresh chevre

Place apples and cranberries in a food processor. Chop until finely minced but not pureed. Toss apple mixture with lime juice, oil, and honey. Stir in red onion, peppers, garlic, and cilantro. Season with salt and pepper. Let flavors blend before serving (about 30 minutes at room temperature). Serve with corn chips and fresh chevre.
