Valley Bounty: Beets
Google beets, and the top returns promise super health benefits and sell beet powder. I was more interested in beets as regular, delicious, food, and decided to abandon Google and turn to local farms. There, I found what I needed: simple preparations focused on flavor. Roasted beets drizzled with a reduced balsamic vinegar mixed with a little brown sugar. Beets, bitter greens, goat cheese, and a Dijon mustard dressing. Or the simplest of all: sliced, red-and-white striped Chioggia beets, served with other crunchy and colorful winter veggies.
