Valley Bounty: Edamame

One of the best things about edamame, or fresh green soybeans, is how fun they are to eat. The tender beans are sold still in their pods, which you toss in boiling water for just a couple of minutes. Drain and salt, and then eat them by pulling the salty pods through your teeth to squeeze out the beans. On a summer night, they’ll draw a crowd, eating beans and tossing the pods off the porch or into a bowl.
