Valley Bounty: Eggs
As anyone with a backyard flock knows, with the increasing daylight comes an increase in egg production. Eggs make for a wonderful, protein-rich meal any time of day! Hard boil some to slice on salad, try your hand at a savory quiche, a frittata with greens, or pickle some for later (in my family, we pickle eggs with beets so they turn a beautiful burgundy by Easter).
