Valley Bounty: Local Flour

There are all sorts of delicious local ingredients for filling and topping your Thanksgiving pies: pumpkins, apples, maple syrup, and cream, for example. Now you can also use locally grown grain for the pie crusts for this quintessential harvest celebration. Local pastry flour, available at farmers’ markets, food co-ops, and some CSAs, makes a delicious crust with a fresh, nutty flavor. If you’re prepping your feast with kids, give them extra dough and some cookie cutters to decorate the top of the pie.
