One of the delights of local eating is the return of seasonal foods, like much-missed friends greeted joyfully after a long journey away. Despite the year-round availability of local syrup, the short stretch of cold nights and warmer days is worth marking with maple outings and treats. For a simple savory preparation, roast cut winter squash with a clove of garlic inside it, then mash garlic into squash with butter and maple syrup.
