Valley Bounty: Pickles

Pickles provide a refreshing counterpoint to warm winter foods, and they’re easy to make—this time of year, possible ingredients include radishes, turnips, onions, carrots, or cabbage. Quick vinegar pickles can be ready to eat in a few hours: try it out by thinly slicing a red onion and covering with lime juice. Let sit on your counter until dinner and serve with roasted winter squash, an omelet, or a burger.
