Valley Bounty: Spring Greens

The sap is running, the ground is visible between the snow banks, and it’s finally possible to think about spring—even summer! Spring greens are available from local greenhouses, and give an early taste of the bounty to come. Try topping your greens with local cheese, a hard-boiled egg, and chopped watermelon radish. It’s also a good time to consider a summer CSA share. Signing up now gives you the widest choice of farms and locations, and provides income to farmers when expenses are high and receipts are low.
