Valley Bounty: Sweet Potatoes
Sweet potato tubers meld well with both savory and sweet flavors, and they are available from local sources all winter long. Of the many ways to serve them, one of my favorites is curried sweet potato fries with coconut oil. They’re easy to cut up and pop in the oven, and guests love them. Slice, toss with oil and curry powder, and bake the fries for about 45 minutes, flipping halfway through. Serve with ranch or dijon dressing on the side for dipping.
