Optimizing Yields in Beef Cattle:

The butchers will lead a discussion on basic anatomy, yield testing, quality assessment, retail cut options and cooking methods.

To register for the two-part workshops people can email me directly and include their name, the name of the farm or organization they are affiliated with, and its location.

Priority will be given to livestock farmers in the Berkshire-Taconic region.
