3rd Annual Cellars & Cave Tour of Heath and Colrain

All are invited to The Heath Agricultural Society 3rd Cellars & Cave Tour taking place Saturday, April 16th. Take a firsthand look at a variety of root and cider cellars as well as a cheese cave. Try a do-it-yourself workshops featuring an introduction to canning, making cheese, cider, beer, sausage and maple syrup. The Cellars and Cave tour is a collaboration between Heath and Colrain neighbors including: Bourke Shire Farm, Colonel Maxwell Farm, The Benson Place, Dell Farm, the Manse, Stoneman Brewery, Wilson Hill Farm and Katywil Farm Community. All proceeds go to support the Heath Agricultural Society. Registration is required. For schedule and fees please visit our website.

Do-It-Yourself Workshops:

Introduction to Cider Making by Bob Bourke of Bourke Shire Farm: Discussion on cider making equipment, materials and techniques from raw juice to finished product. We will briefly cover pressing, vessels, hydrometers, yeasts, additives, fermentation, troubleshooting, and bottling. Samples and worksheet will be provided. 90 – 120 minutes in length. *Limited to 20 people.

Introduction to Cheese Making by Sheila Litchfield of Dell Farm: Introduction to cheesemaking with Ricotta cheese making demonstration. Recipe provided and participants get to bring home their own cheese. 90 minutes in length. *Limited to 10 people.

Introduction to Backyard Sugaring by Sue Draxler of Colonel Maxwell Farm: Learn the basics of making maple syrup, from tapping a tree and collecting sap to processing the sap into a final product.  You don’t need expensive equipment to make your own syrup on a small scale.  Discussion includes winter tree ID, tree physiology, weather and environmental conditions and demonstration will end with a taste of the finished syrup. 90 minutes in length *Limited to 20 people.

Introduction to Sausage and Salami Making by Haynes Turkle of Katywil Farm Community: Fresh sausages and dry cured salami (Salumi in Italian) are among the most ancient culinary traditions. In this hands-on workshop learn how to make sausage and salami from beautiful pasture raised pork and beef with fresh herbs and spices. You will never find anything so unique or delicious in the store! Please bring an apron if you have one.  120+ minutes in length   *Limited to 10 people.

Canning at Home 101 by Eric Goldstein of Wilson Hill Farm: Intro to canning and canning safety using the hot water bath method.  Learn how to safely preserve the tastes of summer to have and enjoy all year long. 120 minutes in length  *Limited to 15 people.

Introduction to Home Brewing by Justin Korby of Stoneman Brewery, known for the first beer CSA in MA and also for having the smallest brewery in the state: Home brewing workshop where you will learn how to brew your own beer in your kitchen. Beer will be available for sale.  120 minutes in length *Limited to 6 people
