Mrs. Cheney’s Nobby Apple Cake

3 c. McIntosh apples (or mix of McIntosh with Gala or Cortland)

¼ c. shortening

1 c. sugar

1 egg

1 t. vanilla

1 c. flour

½ t. baking soda

½ t. baking powder

½ t. salt

½ t. cinnamon

½ t. nutmeg

1/4c chopped nuts, 2 heaping T. applesauce and dried cranberries

Peel apples and cut into ½ inch chunks. In a large mixing bowl, cream shortening and add sugar, then beat in egg and vanilla. Sift together dry ingredients and add to egg mixture. Fold in apples, nuts, applesauce, and cranberries. Bake in a greased, 8” square pan at 350 degrees for 45 minutes.
